Have you noticed that there are a lot of local roasters selling their coffees as organic? I wasn't aware they were all certified by USDA. Ric Goodman, who roasts and sells coffee from his Leicester operation, certainly is USDA certified. And Dynamite Roasting in Black Mountain is as well. Next time you see "organic" on a local coffee bag, be sure to ask the roaster about USDA certification.
